Question on Canning Apricots

Ways to store, can, smoke, dry, salt, or just to preserve foods.

I'm picking apricots tomorrow and dont just want to make jam with them. I have alread made over 40 pints of cherry and strawberry as it is. So has anyone here ever had home canned apricots in a heavy syrup? What is the texture/flavor like. I love canned peaches and I like fresh apricots (from the tree!) and apricot jam.

Any Advice?

Why not dry some? Dried apricots store well, are great as snacks and can be used for cooking.
When in doubt, apply rule ·223 or ·308 -- unless you have a more preferred calibre.

I had them growing up, while I don't know the exact logistics of canning them because I was too young I do remember that Peaches were still slightly firm and you could cut them with a fork the Apricots you had to eat with a spoon because they would fall apart.

Hhmmm.... Well I'll just have to try it and see if I like them. I like making spice fruit compote to go with meats like ham and pork roasts. Those are good with chicken and turkey too. So if they are really soft I'll just heat them up with some spices and serve along side. Thanks for the info.

I do like them dried but no one else in my family does. :roll: And dried fruit only lasts about 6 months as opposed to the full year of canned food. Plus I am not an expert or even amature at drying yet. Maybe I could make fruit leather. All my kids enjoy that and I know how to do it pretty well.

And Wulfin you'll have to get in line! On Jam making days here everyone hovers around the kitchen hoping to get to scrape out the pots when I'm done. But there really is nothing like fresh strawberrry jam is there?

Drying, I've dehydrated probably 50+lbs of fruit and well of 1,000lbs of meat. If you dehydrate, vacuum pack and store in the pantry you will have about a year shelf life. If you store in the refrigerator you'll get a couple of years and the freezer is indefinitely. We typically used the Apricots for topping on Ice Cream or Angel Food Cake. As to the Strawberry's, I'm the oddball and have to pass. The only fruit I eat are Bananas and occasionally Apples and they must be dehydrated but considering I don't eat vegetables at all....
