Roti are East Indian whole-wheat flatbreads that are simple and very tasty.

Mix 1 cup of whole wheat flour with 1 cup of cake flour, slowly add water so that it can be gathered together into a soft dough (usually takes just under a cup of water). Knead 7-8 minutes, make a ball, put it in a bowl and cover with a damp dishcloth. Let sit for half an hour. If the dough is too soft to form, flour your hands and knead until it holds. Divide into 12 balls, dust each with a little flour, cover and set aside. Heat a cast iron skillet on medium-low. Take a ball of dough and flatten it with your palms. Lightly dust both sides with flour. Roll it out to a 5-6 inch round. Once the skillet is hot, slap the round down and cook for 1 minute. Flip it and cook for about 30 seconds more. Then throw it under the broiler or over a gas flame for a few seconds to puff the roti. Eat hot, they don't keep well but they don't last long either.

Flat breads have a lot of advantages over leavened breads; they can used soft high starch wheats mixed with or substituted by low gluten grains like miller, sorghum or flour corn, as well as, they tale much less time and fuel to prepare.

That is why I like posting a lot of bread recipes. Preferably the flat or fry breads.

Bread was the primary food for a lot of cultures. In a disaster knowing ways to turn flour into nourishment could be what keeps you alive.

paramudduck, you may be one grumpy hippie, but your tips could be the thing that keeps some of us alive.

Have you considered putting them in one document that can be loaded as a PDF? Printed out they could be filed with the flour supplies and be available when SHTF and/or shared with others not lucky enough to be here. :gs:

I have come to the same conclusion. If you look at the diet of Dark Age (an EOTWASKI event if there ever was one) European or Oriental presents, they essentially lived on grains with some vegetables and a very occasional bit of meat or fish. The Intensive Gardening Subsistence food production is based on a land use of 10% vegetables for vitamins and minerals; 30% high calorie root crops; and 70% grains. You will starve for want of calories trying to live on vegetables alone.
The problem with fry breads is fats and oils will be very scarce in a long term SHTF event and frying will be very limited.

One reason I like the Roti recipe no oils required.

I have, after long thought on the matter, came to the conclusion that a oriental type of cooking is about the most efficient for disaster events. A true wok with a piece of grill and a griddle sheet will do most of the cooking you will need to do.

Bread and drippings was a staple of the times you speak of in Europe. Drippings was the juices saved from the cooking of meats. Pour it over a hunk of bread and the poorer folk had a meal.

Good Lord - I'm poorer folk?
When in doubt, apply rule ·223 or ·308 -- unless you have a more preferred calibre.

Sure we are! If we weren't we would not be on here. Our stewards would be in charge of the underground warehouses in our former missile base retreats.

Have to make sure the wine cellars and the caviar are taken care of properly after all we do have our priorities.

As you say, we do have our priorities. And they must be maintained at all costs.
(Thank heaven for that stimulus package: Without it I might've had to switch from Black Caviar to Red, and from Blue Label Johnny Walker to Black Label for the after-work drinkies.)
