I have and will.
I did pass on some lychees, that had turned yellow I believe they were reacting with the can.
I believe the oldest canned item I've eaten was 5 years past expiration, and it was just fine.
Would you eat a can food 2 years past date?

The expiration date is really a Best Before Date. That means that after that date it could go bad but uausally it means that it starts to loose nutrional value. Not as many vitamns and such.

For Thanksgiving I made two pumpkin pies using condensed sweetened milk that was 3 years past its printed use by date. The can looked as normal as the day it was put in the cupboard, no unusual smell. None of us got sick.

No problem as long as the can is in good shape, it smells ok and dosen't hiss when the can opener punctures it. If it's bad buthasn't been bad for long the can might not bulge but it Will hiss from the pressure of the gasses so listen close when opening cans past their best by dates.

On older foods afetr checking with smell test and a look, I always touch a little bit on tip of tounge, if I geta coppery flavor I throw it away. That has only happened two times in my life and to eb honest, I have eaten some pretty old stuff. In 1970's I ate C-rations in military that were made in 1948....

I recently read a article about canned food studies, saying many foods will keep their nutritional value for 36 to 48 months beyond the date on the can. They said exactly what you folks did here. If it's bulging or smells funky, DON'T eat it. But otherwise, I'd simply boil WELL any foods over the date.

I have been testing some old Y2K preps that I did back before oxygen absorbers and food saver bags.
Some were good and some were not. I would cook the beans that were darker because of the oxygen but didn't get any additional moisture into it and I tasted them and waited about 30 minutes and then eat a few and went on my way. The bean was a little hard on the outside but was eatable. The second batch that I cooked didn't taste good and I didn't go any farther. I through out those beans. I have done some rice the same way and it was okay but sure wouldn't want to have depended on it. Can goods, I have a few but I have not been brave enough to try it yet. Candy, some had got moisture and like mints were soft. What I did to test them was to put them into boiling water and use them in tea. I was surprised it was good and because I boiled it when and enjoyed my tea. I have tried eating hard candy and it was still good but because of oxidation was a little lighter in color. I tested some hot chocolate and I tasted it but just didn't trust it because I just wasn't sure. Potatoes were good but didn't eat but a bite. Now the freeze dried tuna and other food that I bought back in the early 80's were still good and I didn't test or even open up the can. I though if they have lasted this long I would just keep them like they are and use them in an emergency only. I still need to test Mac and Cheese that came in the box. I think the noodles are still good but not sure about the cheese. So that test is pending. Seeds: Some seeds didn't sprout and those that I put in nitrogen did. The maze sprouted and I picked it from a field back before the year 2000. So that was a good sign. Now I am going to put some of those seeds into the ground and just to see if they do grow. So that part of the test is still pending. If my life had depended on the food stores that I had stuck back I doubt I would have made it! I know better in how to preserve food and I don't miss any steps because my very life can depend on it. The testing will continue
