Rubies, I always blanch me peas and carrots after thawing-I realize they are blanched but after working in one of those places one season I do it to make sure they are sanitized. Some places are really not very sanitary unless the health inspector is standing right there. Thanks for sharing though and I just wanted to clarify my reason for doing so.
