I recently helped a friend clean out a garage, and had come across several stainless steel kitchen knives that were borken right at or close to the handle. Leaving a remaining blade of anywere from 6 to 9 inches, being the pack rat that I am I saved some of the wider thicker ones and have started turning them into usable knives.
I traced the pattern on the blade then used a dremel cut off wheel to remove the excess materel then sanded the final contour. I havent decided what I want to make the scales out of yet.
I figure this is a decent use for something that would have been tossed in the trash .here are two of my creations.

How big is the knife on top? With a little more rounded tip I bet that would make a good skinner for up to med size game depending on how big it is.
