Cheese Making

Just wondering if any one has ventured into cheese making?
There is a class being offered locally and I am considering taking it.

agree with wulfin!
I have only read on cheese making. i'd like to learn, but we don't have any accessto fresh whole milk. i do know that several types of soft cheese can be made with dry milk. I'll be interested in hearing more about it!

By the time I went to register for the class (2 days later) it was full.
DH gifted me with "Home Cheese Making" by Rikki Carroll at Christmas which I have started reading. She has the New England Cheesemaking Supply Co. The book is very informative and is considered the "Bible of Home Cheese Making".
Her website is http://www.cheesemaking.com and kits and supplies are sold. She also offers classes for those who are local
to Massachusetts. The price of her kits is very comparable to other kits sold by other companies.
She does have a DVD "Cheesemaking 101" that I will probably order since I can't take one of her classes.
I did find that Hoegger Supply company (http://www.hoeggergoatsupply.com) has the perforated skimmer for $2.45 (this is $10.00 less than the one at New England Cheesemaking Supply Co).
I will soon be venturing into cheese making at home, and will report the results.
