Mike, down here in La., a 1 pound pack of CAmillia red beans (or Navy beans!) makes a nice pot of beans. It'll serve at least 6-7 hungry folks! ya cooks it sloooooow ov er medium to low flame! Put in some tabasco from New Iberia ( just up the road!)Tassso is good but pickled pork or hamhocks are reall nice too! LOve rice and gravy too! Or smothered round steak with some tony chachere, konrico rice, 'tater salad with bread pudding for desert!! I'm so hungry but its so early! Down in Nawlins, New Orleans, we'd have red beans and rice on Monday when mommas do the wash. Cooking beans is slow, non-intense cooking so they could do the wash and just ck the beans every now and then. Grew up on the stuff and still love it! Prep and pray, the end has arrived!
